After Singapore won their independence, it began to thrive as a destination for travelers wishing to experience an Asian center for culture and diversity. Part of their diversity is their love of a wide range of cuisine, including fine dining. We have compiled a short list of our top three favorites of the best fine dining in Singapore.
Restaurant André
The best restaurant in Singapore since 2010, Chef André Chiang’s Restaurant André creates more than just amazing food, he elevates it to an art form.
Chef Andre has researched how our capacity to taste food is influenced by our memory banks, through the personal experiences we acquire over time. This has led him to develop a culinary principle – OCTAPHILOSOPHY – based on eight primary characteristics: Unique, Texture, Memory, Pure, Terroir, Salt, South and Artisan – the backbone of the creative process at Restaurant ANDRE.
While Restaurant André will be closing on February 14, 2018, Chef André will undoubtedly have a new venture that will take its place.
Corner House
Housed in a colonial bungalow built in 1910 that was the residence of the Assistant Directors of the Singapore Botanic Gardens, The Corner House is, in a word, stunning. This elegant, upscale restaurant serves inventive global dishes. The restaurant is regularly lauded for both its excellence in cuisine as well as atmosphere. Out every window is lush foliage which evokes a serene sense of calm. Upon arrival, you enter the Reading Corner until your table is ready. Whether it’s in the Claret Corner (home to the restaurant’s wine cellar), the Whispering Corner, or on The Verandah – every space in the restaurant is simply lovely. Under the direction of Chef Jason Tan, aka, Suitcase Chef, Corner House benefits from his travels around the world in search of new ideas and inspiration.
Wanderlust aside, the Suitcase Chef shares other qualities with E J H Corner, including an exploring mind, an interest in provenance, a passion for craft and quality, and a devotion to nature and terroir.
Les Amis
Considered to be one of if not the finest French restaurants in Singapore, Les Amis first opened in 1994. With one of the largest wine cellars and collections in Southeast Asia, Les Amis is known for its charm and quality cuisine. In 2013 Executive Chef Sebastien Lepinoy took the helm of the kitchen.
Since joining the Les Amis family, Sebastien has made it his mission to further the restaurant’s philosophy – to deliver the ultimate fine-dining experience realized through attention to detail and dedication to sourcing and serving the finest ingredients. Furthermore, his style of using French technique with modern aesthetics ties in perfectly with Les Amis.
Les Amis is the flagship of the Lesamis Group restaurants collection and a favorite of many returning diners as well as Michelin, with two Michelin Stars.
