Reduce the heat and simmer for five minutes or until sauce thickens. Allow it to cool completely before straining into a container. Keep this simple syrup refrigerated for up to a week. Now that your syrup is prepared you can make this wonderful cocktail! In a shaker, muddle a half cup of fresh blueberries. Add four ounces of vodka with an ounce each of elderflower syrup and simple syrup. Shake well and pour into two martini glasses. Top each with a splash of soda water and garnish with fresh herbs if desired.
